Upgrade your fig newtons to these delicious Oatmeal Fig Bars! Honestly, these bars are the bomb. They are very simple to put together, using a food processor to make your own fig jam, then sandwiching between an oatmeal crust.

Soak & Combine: 10 min.
Preheat the oven to 350 degrees Fahrenheit.
Remove any stems from the dried figs, then place them in a small bowl and cover completely with hot water. Allow them to soak for 10 minutes.
To make the oatmeal crust:
In a second large bowl, make the crust by mixing Almonds, Almond Flour, Oatmeal, Protein Powder, Peanut Butter, Almond Milk, Maple Syrup, Cinnamon, Salt, and Ginger. Stir until fully combined.
Food Processor: 10 min.
Remove the figs from the water (set aside 2 Tbsp water) and put them in a food processor. Add Honey and the set aside water and process until the mixture is smooth, about 5-10 minutes.
Baking dish: 25 min.
Take three-quarters of the crust mixture and press it into the bottom of a large baking dish. Use a spatula or other utensil to firmly press it down, covering the entire dish.
Spread the fig mixture on top of the almond oat crust. Top with the remaining crust mixture and spread into an even layer.
cook: 25 min. – Bake
Bake in the preheated oven for 25 minutes until the center is slightly firm to the touch and the corners have begun to brown. Allow the dish to cool before cutting it into squares.
Total: 70 min.
Let cool and split into 8 equal quantities. Food will keep in the refrigerator for 5-7 days.
