Jam: 20 min.
Add Blueberries and Maple Syrup to a medium sized pot on the stovetop over medium heat. Heat until the berries release their liquid and the mixture reaches a boil, then reduce heat and let simmer for 10 minutes. Using a utensil, carefully mash the blueberries into a pulp, then add Chia Seeds and stir to combine. Remove from heat and let cool while you move on to the crust.
Crust: Mix - 10 min.
Mash Bananas in a bowl or stand mixer. Add Applesauce, Vanilla Extract, Oatmeal, Salt, Protein Powder, and Baking Powder. Mix to combine.
Assemble: 10 min.
Prepare a baking dish (9”x13” or larger) with non-stick cooking spray. Add about ⅔ of the crust mixture to the dish and spread evenly into a single layer. Add the blueberry jam and spread it into a second layer. Lastly, add the remaining crust on top of the jam and spread it into a third layer, being sure to cover all of the jam areas.
Bake: 40 min.
Bake for 40 minutes, until the center is firm and the edges turn golden brown.
Total: 80 min.
Split into 8 equal quantities. Food will keep in the refrigerator for 5-7 days.
