Food Processor: 10 min.
These bars are made in a food processor. A large one is best (8-10 Cups). If you do not have one of this size, you can split the two main steps into separate batches and combine them later in a larger bowl.
Combine almonds, figs, and coconut flakes in a food processor. Process the mixture on low speed for about 5 minutes or until all the ingredients are thoroughly broken down. For smoother bars, continue processing for another few minutes.
Food Processor: 10 min.
Add all the remaining ingredients to the food processor: pumpkin seeds, walnuts, dried cranberries, flaxseed meal, coconut oil, maple syrup, chia seeds, cinnamon, and salt. Pulse until combined. If necessary, process for an additional 5 minutes until the pumpkin seeds are finely chopped.
Baking dish: 25 min.
Line a medium pan with parchment paper and press the mixture into it. Cover the dish and cool the mixture in the refrigerator for at least 20 minutes to help everything set together before cutting.
Total: 45 min.
Let cool and split into 8 equal quantities. Food will keep in the refrigerator for 5-7 days.
